US consumers are increasingly worried about what they encounter in the supermarket. Either there are no eggs on the shelves or they are priced up to a dollar each. People are panic buying and even stealing what has become a pricey commodity. Eggs are so expensive right now because multiple ­avian influenza outbreaks have suddenly significantly reduced the supply of eggs. The virus killed about 17.2 million egg-laying hens in November and December 2024 and another 8 million in January 2025.
